    This is a quick oat cake that includes a chocolate chip and walnut topping. It is ideal for picnics, packed lunches or work lunches.

    Ingredients
    Serves: 24 

    • 1 3/4 cups (435ml) boiling water
    • 1 cup (90g) rolled oats
    • 1 cup (155g) brown sugar
    • 1 cup (220g) white sugar
    • 125g butter or margarine
    • 2 eggs
    • 1 3/4 cups (220g) plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 tablespoon cocoa
    • 1/2 teaspoon salt
    • 1 cup dark chocolate chips
    • 1/2 cup chopped walnuts

    Directions
    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Mix water and oats in a mixing bowl then let sit for 10 minutes.
    2. Add sugars, butter and eggs. Mix well.
    3. Add flour, bicarbonate of soda, cocoa and salt. Blend.
    4. Pour into greased and floured 15x35x2cm jelly roll cake tin. Top with chocolate chips and chopped nuts.
    5. Bake in a preheated 180 degrees C oven for 20 minutes.
