Marbled Biscuits with Chocolate Chips

    Every now and then you need to make something different, which is when I make these marbled chocolate chip biscuits.

    Serves: 60 

    • 500g butter
    • 1/4 cup (65ml) water
    • 1 1/2 cups (345g) white sugar
    • 1 1/2 cups (250g) brown sugar
    • 4 eggs
    • 2 teaspoons vanilla essence
    • 4 3/4 cups (600g) plain flour
    • 2 teaspoons bicarbonate of soda
    • 3/4 cup cocoa
    • 4 cups dark chocolate chips

    1. Preheat oven to 180 degrees C.
    2. In a large bowl cream together the butter, water, white sugar and brown sugar until light and fluffy. Add the eggs one at a time beating well with each addition then stir in the vanilla.
    3. Combine the flour and bicarbonate of soda then stir into the creamed mixture. Fold in the chocolate chips then fold in the cocoa powder last to create a marbled effect.
    4. Drop rounded spoonfuls of the mixture onto a baking tray.
    5. Bake for 8 to 10 minutes in the preheated oven. Allow biscuits to cool on baking tray for 5 minutes before removing to a wire rack to cool completely.

    I loved the idea of a marbled chocolate chip cookie, so I was anxious to try this. I noticed that the ingredient list called fo for water, and yet it was not specified as to how it was to be used in the instructions. I put two and two together, and figured it was to moisten the cocoa, but this should be clarified. Also, in terms of marbling, I think it would be better to divide the dough into two portions, and add the cocoa to one portion, so that you have a dark dough that can then be folded into the light one.     These are good cookies, but... not the cookie for my family. They don't have that sweet tollhouse cookie taste to them. While it was fun to try something different, I won't be making them again.  -  15 Sep 2002  (Review from Allrecipes USA and Canada)
