Date Cake with Walnut and Chocolate Chip Topping

This is a rich date cake that is topped with a combination of walnuts, chocolate chips and brown sugar before being baked.


Serves: 24 

  • 1 cup dates, pitted and diced
  • 1 teaspoon bicarbonate of soda
  • 1 cup (250ml) water
  • 1 cup (220g) white sugar
  • 2 cups (250g) plain flour
  • 1 cup mayonnaise
  • 1 pinch salt, to taste
  • 1/2 cup (90g) brown sugar
  • 1/2 cup chopped walnuts
  • 1/2 cup dark chocolate chips

  1. Preheat oven to 180 degrees C. Lightly grease one 20x30cm cake tin.
  2. Bring water to a boil. Pour over diced dates and bicarbonate of soda. Let stand until cool.
  3. Stir into the dates the sugar, flour, mayonnaise and salt. Mix until just combined. Pour batter into prepared cake tin.
  4. Mix the brown sugar, nuts and chocolate chips together. Sprinkle over top of batter.
  5. Bake at 180 degrees C for 40 to 45 minutes.
