These biscuits have a lot going on with the inclusion of chocolate chips, diced zucchini, walnuts and some cinnamon.


Serves: 42 

  • 185g butter, softened
  • 1 1/2 cups (330g) white sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla essence
  • 1 1/2 cups finely diced zucchini
  • 3 1/4 cups (400g) plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 cup chopped walnuts
  • 3/4 cup small dark chocolate chips

  1. Preheat oven to 180 degrees C. Grease baking trays.
  2. In a large bowl cream together the butter, sugar. Beat in egg and vanilla. Stir in the zucchini.
  3. Combine the flour, baking powder, salt and cinnamon then stir into the zucchini mixture.
  4. Mix in the chocolate chips and walnuts.
  5. Drop by heaping spoonfuls onto the prepared baking trays.
  6. Bake for 12 to 15 minutes in the preheated oven until edges are light brown.
  7. Remove from baking trays to cool on cake racks.

Another way to use up those extra zucchinis! Didn't have quite enough cinnamon so made up the difference with mixed spice. Yummy! - 31 Mar 2014
