Chocolate and Apple Cake

    The stewed apple in this chocolate cake creates a very moist crumb and a natural sweetness that makes this one of my favourite cakes.

    Serves: 24 

    • 2 cups (250g) plain flour
    • 2 tablespoons cocoa powder
    • 1 1/2 teaspoons bicarbonate of soda
    • 1/2 teaspoon salt
    • 125g butter
    • 1 1/2 cups (345g) white sugar
    • 2 eggs
    • 2 teaspoons vanilla essence
    • 2 cups stewed apples
    • 1 cup dark chocolate chips

    1. Preheat oven to 180 degrees C. Grease and flour a 22x32cm cake tin.
    2. Sift together the flour, cocoa, bicarbonate of soda and salt. Set aside.
    3. In a large bowl cream the butter and sugar together until light and fluffy using an electric mixer set on medium speed. Beat in the eggs one at a time. Blend in the vanilla essence. Beat in the flour mixture alternately with the stewed apples.
    4. Pour the batter into a 20x30cm baking dish. Sprinkle with the chocolate chips. Bake at 180 degrees C for 35 minutes or until a toothpick inserted into the centre of the cake comes out clean. Cool in the cake tin on a cake rack.

    i doubled all the ingredients except the apple and made a massive tray bake.which all got devoured at the Steve parsons gig tonight.  -  18 Oct 2015


    This is a great cake. I had only a bit over a cup of apple so used part milk and the apple taste was perfect, as was the texture. Also there was a whole lot of mixture so I used the cake tin specified and half a dozen muffins too. My family of four ate the whole lot in under two days. Try it for a pudding, just warm with a bit of cream.  -  07 Feb 2013


    Just made this cake - it is quick and easy and tasts geat. Made for moning tea with friends - they all loved it. I had to make up the apple and thought it may have been a little warm when I added it - didn't matter, worked anyway. Cheers for the recipe.  -  06 Feb 2013
