    A rich dark chocolate and butter icing is flavoured with the almond liqueur Amaretto to create a wonderful topping for any cake or dessert.

    Serves: 12 

    • 375g dark cooking chocolate, diced
    • 3/4 cup (185ml) amaretto liqueur
    • 250g butter, cut into pieces

    1. In a saucepan over low heat combine chocolate and amaretto.
    2. Stir constantly until the chocolate is almost melted then remove from the heat and continue to stir until the chocolate is completely melted.
    3. Beat in the butter one piece at a time until smooth.
    4. Refrigerate until icing is of a spreadable consistency.
