Chicken Paninis with Pesto and Cheese

A delicious change from a normal sandwich, and almost infinitely adaptable. Try different cheeses, or different flavours of pesto.


Serves: 4 

  • 1 loaf focaccia bread or ciabatta, quartered
  • 1/2 cup basil pesto
  • 1 cup diced cooked chicken
  • 1/2 cup diced green capsicum
  • 1/4 cup diced red onion
  • 1 cup grated Havarti or Cheddar cheese

  1. Slice each quarter of focaccia bread in half horizontally. Spread each half with pesto. Layer bottom halves with equal amounts chicken, capsicum, onion and cheese. Top with remaining focaccia halves, forming 4 sandwiches.
  2. Cook paninis 5 minutes in a panini press, or alternatively heat in a frypan until both sides are golden brown and cheese is melted.
