The classic 'a bit of everything' fried rice, with prawns, ham, chicken and vegetables. A great use for leftover rice as well.

Serves: 8

  • 1 1 /2 cups (315g) uncooked white rice
  • 3 tablespoons sesame oil
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 1 cup (150g) small prawns - peeled and deveined
  • 1/2 cup (60g) diced ham
  • 1 cup (150g) boneless chicken breast halves - cooked and chopped
  • 2 stalks celery, chopped
  • 2 carrots - peeled and diced
  • 1 fresh green capsicum, chopped
  • 90g green peas
  • 1 egg, beaten
  • 60ml soy sauce

Preparation:10min  ›  Cook:30min  ›  Ready in:40min

  1. Cook rice according to packet directions. While rice is cooking, heat a wok or large frying pan over medium-high heat. Pour in sesame oil and stir in onion. Fry until golden, then add garlic. When garlic is lightly browned, mix in prawns, ham and chicken. Fry until prawns are pink.
  2. Lower heat to medium and stir in celery, carrot, green capsicum and peas. Fry until vegetables are crisp-tender. Stir in beaten egg and cook just until egg is scrambled and firm.
  3. When rice is done, mix thoroughly with vegetables and stir in soy sauce. Adjust seasoning to your preference and serve immediately.

This was pretty good. I used leftover cold rice, two eggs and probably less soy sauce. I also added come chopped fresh chilli...easy! - 25 Feb 2010
