Red Wine Marinated Chicken

    Chicken breasts are marinated in red wine before being dusted with a combination of basil, paprika, garlic salt, salt and pepper then fried.

    Ingredients
    Serves: 4 

    • 4 skinless, boneless chicken breasts
    • 3/4 cup (185ml) red wine
    • 1/2 tablespoon diced fresh basil
    • 1/2 tablespoon paprika
    • 1/3 tablespoon garlic salt
    • 1 pinch salt and pepper, to taste
    • 500ml oil, for frying

    1. Place chicken in a nonporous glass dish or bowl. Pour wine all over and toss to coat. Cover dish or bowl and refrigerate to marinate for at least 2 to 3 hours.
    2. Remove chicken breasts from marinade (discard any remaining marinade) then season with basil, paprika, garlic salt, salt and pepper.
    3. Heat oil in a medium frypan over medium high heat.
    4. Add chicken and saute on each side until a nice brown/red colour is reached and the inside is no longer pink (20 to 30 minutes).

    Very flavorful, with just the right amount of zip! I was only able to let it marinade for 1 1/2 hours, but it still turned out great. Towards the end of cooking, I chopped up a green onion and tossed it in the pan, then added about 1/4 cup of the red wine. I let the wine reduce and, after plating the chicken, poured it over the top. Served with broccoli and rice.
