Chewy Noel Bars
These are a great chewy style bar that utilises basic ingredients. Green icing is then used to write Noel on the top of each bar giving it the Christmas spirit.
Ingredients
Serves: 12
- 2 tablespoons butter or margarine
- 1 cup (155g) brown sugar
- 1 cup chopped walnuts
- 1/3 cup (50g) plain flour
- 1 pinch bicarbonate of soda
- 1 pinch salt
- 2 eggs
- 1 teaspoon vanilla essence
- 1/3 cup (60g) icing sugar for decoration

- Preheat oven to 180 degrees C.
- In a 22x22x5cm baking dish melt the butter.
- Stir together the brown sugar, nuts, flour, bi carb and salt. Add the eggs and vanilla. Carefully pour the flour and egg mixture over the melted butter. DO NOT STIR!
- Bake at 180 degrees C for 20 to 25 minutes.
- Sift icing sugar over top. Place baking paper under cake rack then immediately invert dish onto rack.
- Let bars cool then dust again with icing sugar. Cut into bars and write Noel on each bar with green icing.

Oh yes! This is the best recipe in the world and it certainly is not just for Christmas as I used to do. Now I make these Chewy Noels all year long and call them chewy cake-bars. I have this recipe in my Better Homes and Gardens Homemade Cookies book that I have had for over 30 years and I have used this same recipe that long. I have used pecans if I didn't have walnuts but it is better with walnuts. Everyone should try this recipe.
