    With a shortbread like crust these bars are packed with maraschino cherries, walnuts and coconut. Ideal for a work lunch or picnic.

    Serves: 24 

    • 2 1/4 cups (280g) plain flour
    • 1/2 cup (125g) white sugar
    • 250g butter, softened
    • 2 eggs
    • 1 cup (155g) brown sugar
    • 1/2 teaspoon salt
    • 1/2 teaspoon baking powder
    • 1 teaspoon vanilla essence
    • 1/2 cup chopped walnuts
    • 1/2 cup desiccated coconut
    • 125g maraschino cherries
    • 1 teaspoon butter
    • 1 cup (155g) icing sugar

    1. Preheat oven to 180 degrees C.
    2. Mix together flour, white sugar and butter. Mix until crumbly. Press into a 22x32cm square cake tin. Bake for 20 minutes or until lightly browned.
    3. Beat eggs, sugar, salt, baking powder and vanilla.
    4. Drain and dice cherries reserving liquid. Stir diced cherries, nuts and coconut into egg mixture. Pour on top of crust.
    5. Bake 25 minutes then cool. Cut into squares.
    6. Combine 1 teaspoon butter and 1 cup icing sugar with enough liquid from cherries to make spreadable. Ice the cooled slice. Sprinkle with coconut when icing is almost set.
