Spaghetti is served with sautéed onion, spring onion, pesto and tinned salmon. It is very easy to make and very satisfying to eat.


Serves: 4 

  • 250g uncooked spaghetti
  • 1 1/2 tablespoons olive oil
  • 1 cup diced onions
  • 3 spring onions, finely diced
  • 2 tablespoons prepared basil pesto
  • 2 (185g) tins salmon, drained and flaked
  • 1/2 cup Parmesan cheese

  1. Bring a large saucepan of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Heat olive oil in a frypan over medium heat. Stir in the onions, spring onions and pesto. Cook until tender.
  3. Mix in salmon and cook until heated through. Stir in 1/2 the Parmesan cheese and continue cooking 5 minutes. Toss with the cooked pasta and sprinkle with remaining Parmesan cheese to serve.
