The crumbing of these snapper fillets includes Cajun seasonings giving it a great spicy taste. Serves well with fried rice or noodles.

    Serves: 4

    • 1 1/2 cups dry breadcrumbs
    • 1 1/2 teaspoons Cajun seasoning
    • 1/4 teaspoon salt to taste
    • 2 eggs
    • 250g buttermilk
    • 750g red snapper fillets, bones removed
    • 1 cup (125g) flour
    • 1/4 cup (60ml) vegetable oil as needed

    Directions
    Preparation:14min  ›  Cook:6min  ›  Ready in:20min

    1. Toss together breadcrumbs, Cajun seasoning and salt in a bowl.
    2. In a separate bowl beat the eggs with the buttermilk.
    3. Toss the fish with the flour, shake off the excess then dip into the egg. Shake off excess egg then press into breadcrumb mixture. Set aside.
    4. Heat about 3mm of oil in a heavy bottomed frypan over medium-high heat. Cook for 3 to 5 minutes per side until the fish flakes easily and has browned nicely.

Great recipe! Tried it tonight for dinner and everyone loved it! Try swapping the cajun seasoning for tuscan seasoning if you want a change  -  12 Jul 2011

This was very tasty!! I used fat free mayo instead of the buttermilk and baked in the oven and it turned out fine. I will do this one again!! Thanks for sharing your recipe!!  -  13 Aug 2008  (Review from Allrecipes USA and Canada)

Really great, easy meal, but I did greatly increase the amount of cajun seasoning. I used about two or three tablespoons.  -  15 Jul 2010  (Review from Allrecipes USA and Canada)
