    Mushroom sauce makes a great topping for fish I prefer it on Snapper but it can be used on any grilled, barbecued, steamed or pan fried fish. Great idea for a romantic dinner for two.

    Serves: 2 

    • 8 fresh mushrooms, sliced
    • 3 teaspoons butter
    • 8 medium prawns, peeled and deveined
    • 1/4 cup (60ml) thickened cream
    • 1 pinch garlic powder, to taste
    • 1 pinch black pepper, to taste
    • 2 teaspoons port

    1. In a medium saucepan saute mushrooms in 1 teaspoon butter until tender. Stir in prawns and cook until pink. Transfer to a bowl.
    2. In the same saucepan melt the remaining 2 teaspoons butter. Slowly mix in cream. Stir in the prawns and mushroom mixture then season to taste with garlic powder and black pepper.
    3. Simmer over very low heat until thick. Just before serving stir in port.
