Barbecued Cajun Chicken

    This is an easy marinade for chicken breasts that combines Cajun seasoning with white wine and oil. Perfect for the barbecue but can be done in the frypan too.

    Ingredients
    Serves: 6 

    • 1/4 cup (60ml) vegetable oil
    • 1/2 cup (125ml) white wine
    • 2 tablespoons Cajun seasoning
    • 6 skinless, boneless chicken breast halves

    Directions
    Preparation:10min  ›  Cook:15min  ›  Extra time:3hours marinating  ›  Ready in:3hours25min 

    1. In a bowl mix the oil, white wine and Cajun seasoning. Place chicken in the bowl and coat with the mixture. Cover and refrigerate for at least 3 hours.
    2. Preheat the barbecue for high heat.
    3. Lightly oil the barbecue grate. Discard marinade and place chicken on the barbecue. Cook for 6 to 8 minutes on each side until juices run clear.

    I wish I had mentioned when I first submitted this recipe that I use a Cajun Spice Blend that I buy through Atlantic Spice Company. It's SO much more flavorful than anything you can buy at the grocery store! I buy it by the pound for around $5. I ran out of it once and tried using the store-bought kind, but ended up using the entire bottle and it STILL wasn't that flavorful!     This is one of the simplest and best tasting chicken marinades ever! I used Simple Cajun seasoning from this site, olive oil vs. vegetable (less oil than called for) pounded three chicken breasts down thin and let this marinate all day.
