Basic Homemade Chicken Soup

    It's just chicken and vegetables simmered together but it's so satisfying! Experiment with additions like fresh chopped herbs, lemon and rice, or shredded cabbage and cannellini beans.

    Serves: 10 

    • 1 whole chicken
    • 4 carrots, halved
    • 4 stalks celery, halved
    • 1 large onion, halved
    • water to cover
    • salt and freshly ground black pepper to taste

    1. Place the chicken, carrots, celery and onion in a large soup pot; cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).
    2. Take everything out of the pot and strain the stock. Pick the meat off of the bones and chop or shred. Chop the carrots, celery and onion. Season with salt and pepper to taste. Return the chicken, carrots, celery and onion to the pot, pouring back the stock. Reheat and and serve.

    I found I had a better soup by cooking the chicken to the broth stage first before adding the vegetable That way I was able to have the added vegies a little firmer  -  30 Jul 2011


    Something else. Pretty good soup. I used a roasted chicken carcass from our previous nights dinner as I feel it adds more flavour then the uncooked chicken. I also used tinned chicken stock in lieu of the water, along with my usual seasonings.  -  18 Jul 2008


    Altered ingredient amounts. It's pretty much like mine but I add chicken stock cubes, diced parsnip and turnip, and cooked barley like nan did  -  27 Mar 2011
