Quick Chocolate and Coffee Cake

    Serves: 24 

    • 1 3/4 cups (220g) plain flour
    • 2 cups (500g) white sugar
    • 3/4 cup unsweetened cocoa powder
    • 2 teaspoons bicarb soda
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 2 eggs
    • 1 cup strong black coffee
    • 1 cup (250ml) buttermilk
    • 1/2 cup vegetable oil
    • 1 teaspoon vanilla essence

    Preparation:15min  ›  Cook:35min  ›  Ready in:50min 

    1. Preheat oven to 180 degrees C. Grease and flour two 23cm round cake tins or one 20x30cm tin.
    2. In large bowl combine flour, sugar, cocoa, bicarb soda, baking powder and salt. Make a well in the center.
    3. Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into prepared pans.
    4. Bake for 30 to 40 minutes, or until toothpick inserted into center of cake comes out clean. Cool for 10 minutes then remove from tins and finish cooling on a wire rack. Fill and ice as desired.

    a lovely easy recipe, yes very runny but no problem baked up beautifully, however i didn't have any buttermilk so used cows milk with a teaspoon of vinegar to sour it.  -  09 Oct 2011


    I just finished icing and sampling this cake and I have to say wow! I was a little concerned about the liquid content I really had no need to what a lovely cake nice and dense great texture, I split the cake and had one layer with coffee icing one layer with cream cheese icing and top it off with melted chocolate icing. I also used plunger coffee.  -  10 Jul 2011
