Multi-Seed Muesli Bars

    These bars are delicious and full of crunchy seeds and rolled oats for fibre and protein. They keep well in the freezer so they are always ready to go.

    Serves: 24 

    • 4 cups (560g) rolled oats
    • 1 cup (185g) brown sugar, packed
    • 1 cup wheatgerm
    • 1 teaspoon cinnamon
    • 2 cups (250g) wholemeal flour
    • 2 eggs, beaten
    • 1 cup honey
    • 1 cup canola oil
    • 2 teaspoons vanilla essence
    • 1 teaspoon salt
    • 1/2 cup linseeds
    • 1/2 cup sesame seeds
    • 1/2 cup sunflower seeds
    • 1/2 cup chocolate chips

    1. Preheat oven to 200 degrees C. Lightly grease a 20x30cm baking tray.
    2. Mix the rolled oats, brown sugar, wheatgerm, cinnamon and flour together in a large bowl. In a separate bowl, whisk together the eggs, honey, canola oil, vanilla and salt until evenly blended and stir into the oat mixture.
    3. Stir in the linseeds, sesame seeds, sunflower seeds and chocolate chips. Use your hands to mix the ingredients and press the mixture into the prepared pan.
    4. Bake in preheated oven until the edges are golden brown, 20 to 25 minutes. Cool completely in the baking dish before cutting into 5cm bars.

    I made these bars for my husband after he told me he spends a small fortune buying muesli bars from the petrol station almost every other day with his coffee as a lunch substitute! I made them like some recommended with 1/2 cup apple sauce, used coconut oil instead of canola oil and my seeds mixture was shaved coconut instead of linseeds, used 1/2 cup of almond flake as well mixed with another 1/2 cup of sunflower seeds! It tasted great, I separate the mixture in two square baking dish... this was not a good idea... much better to keep it all in one dish and make them thicker! What I will try next time is to use mashed up ripe banana mixed in Milo chocolate powder! I'm very happy with these and how they turned out and so as my husband! :-)  -  25 Mar 2018


    Great. I halved the recipe (got 15 bars), omitted the sugar entirely, used ground flaxseed instead of wheatgerm, halved the oil with almond milk and used sultanas instead of chocolate chips. Yum! Easy, versatile base recipe.  -  15 Feb 2014


    I made a healthier lower fat version that turned out really great. I used 1/2 cup applesauce and 1/2 cup oil, egg beaters instead of eggs and only 1/2 c honey and 1/2 c sugar.
