Often beer batter can be a plain sort of thing so this is a slightly spiced up version with the batter containing garlic powder, paprika, salt and pepper. Serve with chips and salad.

    • 2 litres vegetable oil, for frying
    • 8 (125g) white fish fillets
    • 1 pinch salt and pepper, to taste
    • 1 cup (125g) plain flour
    • 2 tablespoons garlic powder
    • 2 tablespoons paprika
    • 2 teaspoons salt
    • 2 teaspoons ground black pepper
    • 1 egg, whisked
    • 1 (375ml) can or bottle beer

    1. Heat oil in a deep fryer to 180 degrees C.
    2. Rinse fish, pat dry and season with salt and pepper.
    3. Combine flour, garlic powder, paprika, salt and pepper. Stir egg into dry ingredients.
    4. Gradually mix in beer until a thin batter is formed. You should be able to see the fish through the batter after it has been dipped.
    5. Dip fish fillets into the batter then drop one at a time into hot oil.
    6. Fry fish turning once until both sides are golden brown. Drain on paper towels and serve warm.
