    This is a tasty soup that contains kidney beans, star shaped pasta, tomatoes, onion and garlic. Serve with Italian bread.

    Ingredients
    Serves: 6 

    • 1 tablespoon vegetable oil
    • 250g beef mince
    • 1 large onion, diced
    • 1 clove garlic, crushed
    • 1 (800g) tin diced tomatoes
    • 1 (400g) tin red kidney beans, drained
    • 1 packet vegetable soup mix
    • 1 cup (250ml) water
    • 1/4 cup uncooked star-shaped pasta

    Directions

    1. Heat oil in a large saucepan over medium-high heat. Crumble beef mince into the saucepan and cook stirring frequently until well browned. Remove meat, leaving excess oil in the saucepan.
    2. Cook onion and garlic in oil over medium-high heat until translucent. Stir in tomatoes, kidney beans, vegetable soup mix and water. Reduce heat and simmer 40 minutes.
    3. Add pasta stars, cover and simmer 20 minutes more or until pasta is tender. You may add more water at any time to adjust consistency.
