    Turkey mince is cooked in a barbecue based sauce with capsicum and corn then served with pasta. Adjust amount of chilli to taste.

    Serves: 6 

    • 250g spiral pasta
    • 1 tablespoon olive oil
    • 1 onion, diced
    • 250g turkey mince
    • 1 green capsicum, diced
    • 1 (400g) tin whole kernel corn, drained
    • 1 tablespoon chilli powder
    • 1 tablespoon dried oregano
    • 1/2 teaspoon salt
    • 250ml tomato puree
    • 400ml barbecue sauce

    1. In a large saucepan with boiling salted water cook the spiral pasta until al dente. Drain.
    2. Meanwhile, in a large non-stick frypan heat oil over medium-high heat, add onion and cook for 2 minutes or until softened.
    3. Add turkey mince and cook until no pink remains; about 3 to 4 minutes. Stir in green capsicum, corn, chilli powder, dried oregano, salt, tomato puree and BBQ sauce.
    4. Bring mixture to a boil. Reduce heat to medium and simmer until slightly thickened; about 3 to 4 minutes stirring occasionally.
    5. In a large serving bowl combine the turkey mixture with the pasta. Serve immediately.

    Altered ingredient amounts. I don't think it needed 1 tablespoon dried oregano, 1 teaspoon is enough :D - 21 Mar 2011
