Pumpkin Nutmeg Muffins with Chocolate Chips

    I had always been a fan of pumpkin scones so when this pumpkin and chocolate chip recipe came along I had to give it a go.

    Serves: 24 

    • 3 1/3 cups (435g) plain flour
    • 2 teaspoons bicarb soda
    • 3 cups (660g) white sugar
    • 1 teaspoon salt
    • 1 teaspoon ground nutmeg
    • 2 cups pureed pumpkin
    • 4 eggs, whisked
    • 2/3 cup (150ml) water
    • 1 cup dark chocolate chips

    1. Preheat oven to 180 degrees C. Grease 24 muffin cups or line with muffin cases.
    2. In a large bowl stir together flour, bicarb soda, sugar, salt and nutmeg.
    3. In a separate bowl beat together pumpkin, eggs and water.
    4. Stir pumpkin mixture into flour mixture then beat until well blended. Fold in chocolate chips.
    5. Bake in preheated oven for 30 minutes until a toothpick inserted into centre of a muffin comes out clean.

    These are wonderful! I am always looking for different recipes with pumpkin. Pumpkin is a great source of vitamin A. Making muffins, pancakes, cookies, bread, etc with pumpkin is a fun way for kids (and adults) to get that A.     I made this recipe for Kindergarten treats. More than one child came back for seconds. The leftovers went to the teachers and to my husband's place of employment.
