    Based on a Mexican recipe this dessert is a style of 'Chimichangas' (deep fried burrito). The crispy outside makes a great contrast to the soft sweet inside. But you don't need to fry if you don't want to.

    Serves: 4 

    • 65g butter
    • 3 firm bananas. sliced
    • 1/2 cup (90g) brown sugar
    • 2 tablespoons spiced rum
    • 2 large flour tortillas
    • 1 cup (250ml) vegetable oil for frying

    1. In a large frypan over medium heat melt butter. Stir in bananas and sugar then stir until sugar is dissolved.
    2. Pour in rum and cook 1 to 2 minutes more.
    3. Spoon half the banana mixture onto each flour tortilla and roll up tucking in the ends like a burrito.
    4. In a large frypan heat the vegetable oil over medium-high heat. Fry chimichangas until golden. Drain on paper towels. Serve warm.
