    These banana muffins have the banana added in three ways, mashed, diced and dried. They also include muesli and coconut.

    Ingredients
    Serves: 24 

    • 3 cups (375g) plain flour
    • 2 cups (440g) white sugar
    • 2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon salt
    • 2 eggs, lightly whisked
    • 3/4 cup (185ml) milk
    • 2 teaspoons vanilla essence
    • 1 cup melted butter, cooled
    • 2 bananas, mashed
    • 1 banana, diced
    • 1 cup muesli
    • 1 cup chopped walnuts
    • 1 cup desiccated coconut
    • 1/4 cup banana chips (dehydrated banana), broken

    Directions

    1. Preheat oven to 180 degrees C. Line 24 muffin cups with muffin cases.
    2. In a bowl mix the flour, sugar, baking powder, bicarbonate of soda and salt.
    3. Mix in the eggs, milk, vanilla and butter.
    4. Fold in mashed bananas, diced banana, muesli, walnuts and coconut.
    5. Scoop into the prepared muffin cups. Sprinkle with banana chips.
    6. Bake 25 minutes in the preheated oven or until a knife inserted in the centre of a muffin comes out clean.
