This is a great basic banana cake recipe. Layer the three cakes with icing of your choice. Cream cheese icing works very well with this recipe.


Serves: 12 

  • Cake
  • 3 cups (375g) plain flour
  • 1 teaspoon baking powder
  • 1 1/8 teaspoons bicarb soda
  • 170g unsalted butter
  • 450g white sugar
  • 3/4 teaspoon salt
  • 3 eggs
  • 1 1/2 cups bananas, mashed
  • 1/3 cup (90ml) buttermilk
  • 1 teaspoon vanilla essence

  1. Cake: Preheat oven to 190 degrees C. Grease and flour three 20cm round cake tins.
  2. Sift the flour with the baking powder and bicarb soda.
  3. In a large bowl cream together the butter, sugar and salt. Add eggs one at a time to the creamed mixture, beating well after each addition.
  4. Add alternately to the creamed mixture the flour mixture, the bananas and the buttermilk. Add vanilla and mix well. Pour into the well greased cake tins.
  5. Bake in a preheated oven for 30 to 40 minutes.
  6. To Assemble: Let cakes cool then frost with your choice of icings. Layer the three cakes with icing in between each and then cover the sides and top of the cake with icing.
