Easy Fudge Cake
This very chocolate cake is easy to make with simple ingredients; I have included pecans because I like the texture but leave out if not a fan. Serve with cream or ice cream.
Ingredients

- 4 eggs
- 2 cups (440g) white sugar
- 1/2 cup (60g) plain flour
- 1/2 cup (60g) unsweetened cocoa
- 1/2 teaspoon salt
- 250g butter, melted
- 2 teaspoons vanilla essence
- 1 cup chopped pecans

- Preheat oven to 165 degrees C. Grease and flour an 20x20cm cake tin.
- In a food processor or blender beat eggs for 2 minutes.
- In a large bowl mix together the sugar, flour, cocoa and salt. Slowly beat in the eggs. Beat in the butter and vanilla. Stir in the pecans. Spread batter in prepared cake tin.
- Bake in the preheated oven for 45 to 50 minutes or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool.

I am NOT a baker, I don't have time and I'm not very good at it! But as I was visiting a friend for tea and the British shops have very liitle good pudding choice I decided to go for it! This was SO easy and SO quick to make and the end result was delicious! I did add a fudge icing (from this site also) and re-melted the whole thing in the oven before serving but ALL at the table raved about it and the pecan's gave it that something extra.
