    This chocolate cake's flavour deepens with time. Trying making it a day in advance for a richer, extra chocolately taste.

    Serves: 16 

    • 60g unsweetened chocolate
    • 110g margarine
    • 1 cup (235ml) water
    • 2 cups (250g) plain flour
    • 2 cups (400g) white sugar
    • 1/2 teaspoon salt
    • 1 1/2 teaspoons bicarbonate of soda
    • 1/2 cup (125ml) sour milk
    • 2 eggs

    1. Preheat oven to 180 degrees C. Grease a 23x33cm cake tin.
    2. In a microwave-safe bowl microwave chocolate, margarine and water until melted. Stir occasionally until chocolate is smooth. Allow to cool to room temperature.
    3. In a large bowl mix together flour, sugar, salt and soda. Pour in milk and eggs. Mix the cooled chocolate mixture into the flour mixture. Pour into prepared cake tin.
    4. Bake in preheated oven for 30 to 35 minutes or until a toothpick inserted into the centre of the cake comes out clean. Cool and ice cake with a chocolate buttercream icing.
