Teriaki Tuna Patties
Teriyaki is just one of the flavours in these tuna patties that include tomato sauce, garlic and spring onions. They are dusted with cornmeal rather than breadcrumbs..
Ingredients

- 1 (425g) tin tuna, drained and flaked
- 1 egg, whisked
- 3/4 cup dry breadcrumbs
- 3 spring onions, minced
- 1 clove garlic, peeled and minced
- 1 tablespoon soy sauce
- 1 tablespoon teriyaki sauce
- 1 tablespoon tomato sauce
- 1 teaspoon sesame oil
- 1 teaspoon black pepper
- 1/2 cup cornmeal
- 2 tablespoons vegetable oil

- In a large bowl mix tuna, egg, breadcrumbs, spring onions and garlic.
- Blend soy sauce, teriyaki sauce, tomato sauce, sesame oil and pepper into the mixture.
- Form the mixture into about 6 patties approximately 2cm thick. Lightly sprinkle each patty on all sides with cornmeal.
- Heat oil in a medium frypan over medium heat. Fry each patty about 5 minutes on each side until golden brown.

This is by far the best tuna patties recipe I've ever tried. It's so easy to prepare, and it has great flavor. I substituted crushed seasoned croutons for the bread crumbs, and it worked fine. I also realized after the fact that I'd forgotten to sprinkle the corn meal on the patties. They were delicious anyway. It just goes to show that you can't "mess up" this recipe. This was wonderful!! i skipped the sesame oil as I didn't have any. I will get it for the next time though as my patties were a tiny bit dry. I loved this though and can't wait to have some for lunch tomorrow! Per another persons suggestions I made Peanut Butter Noodles(also from this site) to go with the patties.
