Although I have used this as a main I prefer it as an entree at dinner parties, I love the creamy crab and prawns under the crunchy, garlicky top.

    Ingredients
    Serves: 6

    • 3 tablespoons butter
    • 1/4 cup (30g) plain flour
    • 2 cups (500ml) thickened cream, divided
    • 60g freshly grated Parmesan cheese
    • 2 tablespoons dry sherry
    • 1/2 teaspoon paprika
    • 2 cups cooked crabmeat
    • 1 cup peeled cooked prawns
    • 1 1/2 cups garlic flavoured croutons
    • 1/4 cup fresh parsley
    • 4 tablespoons melted butter

    Directions
    Preparation:10min  ›  Cook:20min  ›  Ready in:30min

    1. Preheat oven to 180 degrees C.
    2. In a large saucepan over medium heat melt butter. Remove from heat and whisk in flour. Pour in 1/2 cup of cream and whisk well; return to heat.
    3. Add cheese and stir until creamy. Remove from heat and pour in remaining cream.
    4. Stir in sherry, paprika, crabmeat and prawns.
    5. Spoon mixture into 6 large individual ramekins.
    6. In a food processor or blender blend together croutons and parsley. Top each filled ramekin with crouton mixture. Drizzle melted butter over the top.
    7. Bake in preheated oven for 20 minutes or until top is browned and bubbly.

I was looking for another way for us to enjoy shrimp and I am so glad that I came across this recipe. This is amazing. Since I didn't have individual ramakins I used a very small casserole dish and made this for 2 people. The only thing I might do differently next time is add a bit of garlic. This was wonderful, thank you Doreen.  -  15 Aug 2003  (Review from Allrecipes USA and Canada)

I sauted diced onions and sliced mushrooms in the melted butter before adding the flour, etc. I also didn't have garlic croutons, and substituted bread crumbs seasoned with some garlic and herb mix. My husband and his friends loved this. Tasty and easy.  -  03 Feb 2003  (Review from Allrecipes USA and Canada)
