    Although I have used this as a main I prefer it as an entree at dinner parties, I love the creamy crab and prawns under the crunchy, garlicky top.

    Serves: 6 

    • 3 tablespoons butter
    • 1/4 cup (30g) plain flour
    • 2 cups (500ml) thickened cream, divided
    • 60g freshly grated Parmesan cheese
    • 2 tablespoons dry sherry
    • 1/2 teaspoon paprika
    • 2 cups cooked crabmeat
    • 1 cup peeled cooked prawns
    • 1 1/2 cups garlic flavoured croutons
    • 1/4 cup fresh parsley
    • 4 tablespoons melted butter

    1. Preheat oven to 180 degrees C.
    2. In a large saucepan over medium heat melt butter. Remove from heat and whisk in flour. Pour in 1/2 cup of cream and whisk well; return to heat.
    3. Add cheese and stir until creamy. Remove from heat and pour in remaining cream.
    4. Stir in sherry, paprika, crabmeat and prawns.
    5. Spoon mixture into 6 large individual ramekins.
    6. In a food processor or blender blend together croutons and parsley. Top each filled ramekin with crouton mixture. Drizzle melted butter over the top.
    7. Bake in preheated oven for 20 minutes or until top is browned and bubbly.
