Classic Lemon Bars

Lemon bars make a great snack, lunch box dessert or finger food dessert. This version is easy to make and tastes great.


Serves: 16 

  • Base
  • 125g butter, softened
  • 1 1/3 cups (175g) plain flour
  • 1/4 cup (60g) white sugar
  • Top
  • 2 eggs
  • 3/4 cup (185g) white sugar
  • 2 tablespoons plain flour
  • 1/4 teaspoon baking powder
  • 3 1/2 tablespoons lemon juice

Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

  1. Preheat oven to 180 degrees C.
  2. Base: Mix together the butter, flour and sugar with a fork until crumbly. Press into an 20cm square cake tin and bake for 20 minutes. Crust will look white. Do not brown.
  3. Top: Combine the eggs, sugar, flour, baking powder and lemon juice in a blender. Blend until well mixed. Pour over pre-baked crust.
  4. Return to oven and bake an additional 20 minutes.
  5. Remove from oven and sprinkle with icing sugar. Let bars cool before cutting.

The recipe worked well and the result was as expected. I used baking paper to prevent any possibility of sticking. - 10 Jun 2012


I was disappointed with mine, I followed all the instructions and the bars at the sides/corner of the tin had a nice chewy lemon topping but the rest of it didn't. And by the next day it was seeping syrup out of it and making them all mushy - 31 Aug 2012


Was very easy to make, although I used my fingers instead of a fork (like when making a crumble), and tasted very nice. It was liked very much by the whole family, thank you. - 09 Jul 2012
