    A basic cheesecake is created with the flavouring coming from the amaretto liqueur. Chill in the fridge before removing from the pan.

    Serves: 12 

    • Crust
    • 1 cup sweet biscuit crumbs
    • 3 tablespoons white sugar
    • 3 tablespoons butter
    • Filling
    • 500g cream cheese
    • 1 1/4 cups (280g) white sugar
    • 3 tablespoons cornflour
    • 500g sour cream
    • 1 1/2 teaspoons vanilla essence
    • 5 tablespoons amaretto liqueur
    • 1/2 teaspoon salt
    • 4 eggs

    1. Preheat oven to 180 degrees C.
    2. Crust: Mix together the biscuit crumbs and the 3 tablespoons white sugar.
    3. Add the melted butter and mix well. Press into the bottom of a 22cm springform pan.
    4. Bake in preheated oven for 10 minutes then set aside.
    5. Filling: In a large bowl combine cream cheese, sugar and cornflour then mix until smooth.
    6. Add sour cream, vanilla, amaretto liqueur and salt. Mix until well blended.
    7. On the low speed of an electric mixer add eggs one at a time mixing well after each addition. Pour batter over crust.
    8. Bake in preheated oven for 60 minutes.
    9. Remove from oven. Loosen around the edges with a knife and cool on a wire rack while still in the pan. Refrigerate then remove from pan when completely chilled.
