    A delicious chocolate ice cream and fruit alternative to the traditional English hot plum pudding, also known as Australian Christmas pudding. Kids love it. Any dried or glace fruits can be used or you can use fruit mince as well. You can use a pudding basin or a bundt pan for this recipe.

    Ingredients
    Serves: 8 

    • 125g glace pears, finely chopped
    • 125g glace apricots, finely chopped
    • 60g glace cherries, chopped
    • 40g sultanas or raisins
    • 60ml brandy or rum
    • 1 litre good-quality chocolate icecream, softened
    • fresh or frozen mixed berries, to serve

    Directions

    1. Combine the glace and dried fruits with the brandy in a medium bowl. Cover and stand overnight.
    2. Next day, mix the dried fruit mixture with the ice cream until thoroughly combined. Spoon into a 1.5 litre (6-cup) pudding basin or mould. Cover with foil and freeze overnight.
    3. To serve, stand mould in hot water for 10 seconds to loosen the ice cream then turn onto serving platter. Garnish with berries.
