    This is a great sweet dessert that also features tinned pineapple, mandarins and cherries. Sounds a bit strange but always enjoyed by those who try it.

    Serves: 8 

    • 1 cup small pasta such as acini di pepe, orzo or risoni
    • 1 (400g) tin crushed pineapple, drained with juice reserved
    • 1 (400g) tin mandarin oranges, drained with liquid reserved
    • 1 cup (220g) white sugar
    • 2 eggs, whisked
    • 1/2 teaspoon salt
    • 3 tablespoons plain flour
    • 1 cup (250ml) thickened cream, whipped
    • 200g miniature marshmallows
    • 300g jarred or tinned maraschino cherries, drained

    1. Bring a large saucepan of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain.
    2. In medium saucepan combine reserved liquids from pineapple and oranges (equals about 1 1/2 cups), sugar, eggs, salt and flour.
    3. Cook until thick while stirring constantly. When mixture becomes thick add cooked pasta and refrigerate overnight.
    4. The next day add the pineapple, oranges, whipped cream and marshmallows to taste. Mix together and top with cherries. Keep chilled until served.
