    This is a great sweet dessert that also features tinned pineapple, mandarins and cherries. Sounds a bit strange but always enjoyed by those who try it.

    Ingredients
    Serves: 8 

    • 1 cup small pasta such as acini di pepe, orzo or risoni
    • 1 (400g) tin crushed pineapple, drained with juice reserved
    • 1 (400g) tin mandarin oranges, drained with liquid reserved
    • 1 cup (220g) white sugar
    • 2 eggs, whisked
    • 1/2 teaspoon salt
    • 3 tablespoons plain flour
    • 1 cup (250ml) thickened cream, whipped
    • 200g miniature marshmallows
    • 300g jarred or tinned maraschino cherries, drained

    Directions
    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. Bring a large saucepan of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain.
    2. In medium saucepan combine reserved liquids from pineapple and oranges (equals about 1 1/2 cups), sugar, eggs, salt and flour.
    3. Cook until thick while stirring constantly. When mixture becomes thick add cooked pasta and refrigerate overnight.
    4. The next day add the pineapple, oranges, whipped cream and marshmallows to taste. Mix together and top with cherries. Keep chilled until served.

    I have made this salad with a few alterations that make this recipe the bomb! Substitute the flour, and use 1 heaping tablespoon of corn starch. Once the pasta and the liquid mixture have been made wait until custardy mixture and pasta cool to room temperature. Once custard is room temperature add in the whip topping, until thouroughly blended. Then add the marshmellows, pasta, pineapple and mandarin oranges. I omit the cherries altogether.     My family loves this! I took it to a potluck with friends, and they loved it too! I had to use orzo since I couldn't find acini di pepe in my 3 local supermarkets (I live in Hilo, Hawaii). I will definitely be making this again.  -  05 Jul 2002  (Review from Allrecipes USA and Canada)
