Vegetable Latkes

    These delicious latkes have zucchini, spinach, potato, sweet potato, carrot and onion. They are mixed with matzo meal, so they are a great choice for Passover too.

    Serves: 6 

    • 1 cup zucchini, grated
    • 1 cup potato, peeled and grated
    • 1 cup orange sweet potato, grated
    • 1 medium carrot, grated
    • 1/2 cup spinach, chopped
    • 1 small onion, grated
    • 1/2 teaspoon salt
    • 3 eggs, lightly beaten
    • salt and pepper, to taste
    • 3/4 cup matzo meal
    • 1/4 cup parsley, chopped
    • 1/2 cup crumbled feta cheese
    • 1/4 cup vegetable oil

    1. Squeeze all excess water out of the vegetables. Rinse then squeeze again. Place in a bowl then add in eggs, salt, pepper, matzo meal, parsley and feta then mix until well combined.
    2. In a large frying pan, heat oil over medium high. Form the veggies into pancakes then fry in the hot oil until golden brown, about 5 minutes per side.
    3. Drain on news paper then serve with sour cream or apple sauce.
