Chocolate Fudge Icing

    Rich chocolate fudge icing which gets its deeper choccy taste from brown sugar. Good for any cake, cupcakes or muffins.

    Serves: 10 

    • 4 tablespoons (80g) butter
    • 1/2 cup packed brown sugar
    • 2 tablespoons milk
    • 1 1/2 cups icing sugar
    • 1 tablespoon unsweetened cocoa powder
    • 1 teaspoon vanilla essence

    1. In a saucepan, melt butter and brown sugar over medium heat. Stir until sugar is dissolved, then add milk. Bring to a boil and remove from heat.
    2. Sift together cocoa and icing sugar. Blend into butter mixture and add vanilla. If consistency is too stiff, add more milk.
    3. Spread quickly over cooled cake, as icing will set very fast.
