Steak with Cherry and Walnut Sauce

    If you don’t want turkey this is another good way to get the Christmas flavours into your meal while sticking to steak. I have to admit although I did it for Christmas a few years back I now just make it when cherries are in season.

    Serves: 2 

    • 1 dash oil
    • 1 thick piece (5cm) of the best quality steak you can buy
    • salt and pepper, to taste
    • garlic bread seasoning
    • 1 tablespoon butter
    • 200g fresh cherries, stoned
    • 100g walnuts
    • 1 clove garlic, finely diced
    • 1/2 cup (125ml) red wine
    • 1/2 cup (125ml) beef stock
    • 2 tablespoons cranberry sauce

    1. Preheat oven to 200 degrees C.
    2. Heat a frypan to medium-high heat and add oil. Season the steak with salt and pepper then fry on both sides to get a nice brown seal.
    3. Place the seared steaks on a tray then lightly sprinkle with the garlic bread seasoning. Place in the oven to continue cooking to how you like it.
    4. Meanwhile, heat a deep frypan or saucepan to medium heat. Add the butter, as soon as melted add the seeded cherries and slowly cook until they start to soften.
    5. Add the garlic and stir until combined and starting to soften.
    6. Add the wine, stock, cranberry sauce and walnuts.
    7. Cook for 10 minutes until reduced. If you like your sauces thicker you could add a cornflour slurry at this point.
    8. Take the steak from the oven and rest for a short time. Serve with the cherry and walnut sauce.
