Apple and Lemon Cake

    This is a simple and luscious cake, made extra-special by the fan of apple slices on the top. Serve with cream, custard or ice cream.

    Serves: 10 

    • 4 eggs, separated
    • 1/2 cup (125g) caster sugar
    • 100g unsalted butter, melted
    • 1 organic lemon, zest grated and juiced
    • 1 1/4 cups (155g) plain flour
    • 1 pinch salt
    • 1 teaspoon baking powder
    • 3-4 apples (depending on size)
    • caster sugar for sprinkling
    • flour for dusting

    1. Preheat oven to 180 degrees C. Grease a round springform cake tin with butter and dust with flour.
    2. Beat egg whites until stiff, cover and chill.
    3. Cream egg yolk and sugar together, then stir in butter, lemon juice and lemon zest. Beat until batter is light and fluffy.
    4. In a separate bowl, sift in flour, salt and baking powder. Mix to combine.
    5. Fold egg whites and flour mixture into yolk batter. Pour batter into the prepared cake tin and smooth top out.
    6. Peel apples and cut in half horizontally. Remove the core then slice the apples carefully length ways, but do not cut all the way through. You need to leave an end piece to hold all the slices together.
    7. Gently fan apple halves and arrange onto the batter. Sprinkle with sugar and bake in preheated oven for 40 minutes.
