These are wonderfully spicy fruit bars with a rich nutty taste, and they are gluten-free as well. You can use halved almonds to decorate the top.


Serves: 40 

  • 8 eggs
  • 1 1/4 cups (250g) caster sugar
  • 2 teaspoons vanilla sugar
  • 1-2 level teaspoons gingerbread spice mix, or mixed spice
  • 2 1/4 cups (250g) ground almonds
  • 2 1/4 cups (250g) ground hazelnut
  • 3/4 cup (125g) sultanas
  • 3/4 cup (125g) currants
  • Filling
  • chocolate or lemon icing
  • peeled and halved almonds, glace cherries, etc.

  1. Line a baking tray with baking paper and preheat oven to 180 degrees C.
  2. Beat eggs in a bowl until fluffy. Gradually stir in sugar, vanilla sugar and spice. Stir in almonds and walnuts and finally fold in raisins and currants.
  3. Transfer mixture on the prepared baking tray and bake in preheated oven for about 20 minutes.
  4. Lay baking paper on work surface and tip the finished cake onto it. Remove the baking parchment from the bottom.
  5. Coat the top of the cake with chocolate or lemon icing and decorate however you like. Cut into small diamonds or rectangles while still warm.
