These are very moreish biscuit bars made with almonds and spiced with allspice and cinnamon. Enjoy with a cup of tea or coffee.


Serves: 40 

  • 2 eggs
  • 2 tablespoons water
  • 1 1/2 cups (250g) dark brown soft sugar or white granulated sugar
  • rum essence, to taste
  • 1/2 teaspoon ground allspice
  • 1 tablespoon ground cinnamon
  • 35g chopped mixed peel
  • 75g chocolate, grated
  • 2 cups (250g) plain flour
  • 3/4 teaspoon baking powder or bicarb soda
  • 1 cup (125g) almonds, finely chopped
  • 65g jam (optional)
  • For the Glaze
  • 2 tablespoons icing sugar or as needed
  • 1 tablespoon hot water or as needed
  • 1 teaspoon lemon juice or as needed

  1. Preheat oven to 180 degrees C. Line a baking tray with baking paper.
  2. Beat together eggs, water and sugar in a large bowl until light and fluffy. Stir in rum essence, allspice, cinnamon, mixed peel and chocolate. Sift in flour and baking powder and fold to incorporate. Stir in almonds and the jam (if using) and stir well.
  3. Spread batter in prepared tray and smooth to even out. Bake in preheated oven for about 30 minutes. Remove from the oven and cut into squares while still hot. Allow to cool in baking tray.
  4. Glaze: Mix together hot water, lemon juice and icing sugar to get a thin, transparent icing. (Adjust the relative amounts to get the consistency right). Brush biscuits with glaze once they have cooled. Store in a biscuit tin.
