Sweet Mini Pretzels

    2 hours 5 minutes

These are an interesting take on the normal salty pretzel. Of course you can also just roll out the dough and cut out any shapes you prefer.

    1 person made this

    Serves: 110

    • 4 cups (500g) plain flour
    • 1 1/4 cups (250g) caster sugar
    • 1 teaspoon vanilla sugar
    • 1 pinch baking powder
    • 250g butter, diced
    • 2 eggs, beaten
    • Icing
    • 1/2 cup (90g) icing sugar;
    • 2 tablespoons rum

    Preparation:45min  ›  Cook:20min  ›  Extra time:1hour chilling  ›  Ready in:2hours5min

    1. Sift flour into a bowl and mix in the sugar, vanilla sugar and baking powder. Form a hollow in the centre and pour in the eggs.
    2. Add the butter and work into a smooth dough. Wrap dough in cling wrap and chill for 1 hour.
    3. Preheat oven to 180 C.
    4. Shape dough into a long roll. Cut into 1cm thick slices and shape each piece into a pencil-thin roll. Shape into small pretzels and place on a greased baking tray. Bake for 18-20 minutes in preheated oven. Allow to cool.
    5. Icing: Stir icing sugar with rum and brush pretzels with it.

Disappointed that after taking time to make the pretzel shape, mine spread so much in baking, you could hardly tell. But nice taste.  -  25 Mar 2011  (Review from Allrecipes UK & Ireland)
