Quince and Orange Jam

    If you have a steam juicer, you can make this delicious jam. You need a steam juicer because quinces are a very tough fruit, but they have a great flavour.

    Serves: 24 

    • 2.25kg quinces
    • 1 1/3 cups (335ml) freshly squeezed lemon juice
    • 3 litres cold water
    • juice of 3 large oranges
    • 450g jam-setting sugar

    1. Set up a large bowl of water and add lemon juice.
    2. Peel quince and clean. Cut into pieces and place immediately into the lemon water to prevent discolouration.
    3. Place quince into steam juicer and make juice according to the manufacturer's instructions. Mix quince juice with orange juice and sugar. Place into a heavy pot, bring to a rapid boil and cook for 3 minutes.
    4. Fill jelly up to the rim into hot sterilized screw-cap jars and briefly put upside down so that a vacuum forms.
