Quick Pasta with Beef and Pineapple Sauce

This pasta sauce is an unusual combination of flavours and very easy to make. Pasta is tossed with beef mince and pineapple in a creamy curried sauce.


Serves: 4 

  • 500g short pasta (such as penne or rigatoni)
  • 400g beef mince
  • 1 leek, cleaned and cut into thin rings
  • 2 tablespoons olive oil
  • 1 (432g) tin pineapple chunks
  • 3 tablespoons curry powder
  • 1 tablespoon stock powder (chicken or beef)
  • salt
  • pepper
  • 200ml double cream
  • 6-7 tablespoons tomato sauce
  • 3-4 tablespoons tomato puree

  1. Cook pasta according to package instructions.
  2. Heat oil in a large frying pan and saute mince until brown and crumbly. Drain tinned pineapple, but save juice.
  3. Add leek and drained pineapple to the mince and saute for an additional 5 minutes over high heat. Deglaze with a little pineapple juice.
  4. Season with curry powder, stock powder and pepper. Add ketchup and tomato puree; mix everything well and simmer covered for 5-8 minutes on low heat. If necessary, add a little more pineapple juice.
  5. Stir in cream. Drain pasta and add to pasta sauce in the pan. Mix everything well and serve.
