This biscuits look and taste great, a simple vanilla biscuit has a marzipan ring piped on it then the ring is filled with a strained berry jam of your choice.


Serves: 80 

  • Biscuit
  • 1 3/4 cups (220g) plain flour
  • 2/3 cup (90g) cornflour
  • 1 egg
  • 1/3 cup (90g) caster sugar
  • 1/2 teaspoon vanilla essence
  • 200g butter, softened
  • Marzipan Topping
  • 250g butter, softened
  • 250g marzipan
  • 1 1/2 cups (185g) plain flour
  • 3 eggs
  • 1 pinch salt, to taste
  • 1/2 lemon, zested
  • Filling
  • berry jam, strained

Preparation:40min  ›  Cook:15min  ›  Extra time:1hour chilling  ›  Ready in:1hour55min 

  1. Biscuit: Mix flour with cornflour. Add egg, sugar, vanilla and butter then combine until a dough. Wrap and chill for 1 hour.
  2. Roll out the dough and cut out 4cm circles.
  3. Preheat oven to 200 degrees C.
  4. Marzipan Topping: Knead together butter, marzipan, flour, eggs, salt and lemon zest.
  5. Transfer to a piping bag.
  6. Assembly: Pipe marzipan circles around the edges of the biscuits.
  7. Put a blob of jam in the middle of each biscuit.
  8. Place on a greased baking tray and bake for 15-20 minutes in preheated oven.
