Homemade Creamy Pumpkin Soup

Every now and then I have a craving to make this beautiful, easy and hearty pumpkin soup, by adding a bit of cream it seems to gain an extra richness and smoothness.


Serves: 4 

  • 1kg pumpkin flesh, diced
  • 100g onions, finely diced
  • 50g unsalted butter
  • 1 cups (500ml) stock
  • 1 cup (250ml) thickened cream
  • salt and white pepper, to taste
  • 2 tablespoons creme fraiche
  • 2 potatoes, peeled and finely diced

Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

  1. Heat butter in a saucepan and saute onions until soft and translucent.
  2. Add pumpkin and potatoes then simmer for a few minutes. Season with salt and pepper then add stock.
  3. Simmer soup for about 15-20 minutes over low heat. If soup is too thick add more stock.
  4. Puree soup with a hand blender.
  5. Stir in cream and heat again but do not boil.
  6. Garnish with creme fraiche.
