    These simple biscuits are made from almond meal rather than flour then spiced with cinnamon to create a homely biscuit. Cutting them into star shapes makes them ideal for Christmas.

    Ingredients
    Makes: 10 

    • 4 egg whites
    • a few drops lemon juice
    • 300g icing sugar
    • 2 teaspoons ground cinnamon
    • 350g almond meal or other ground nuts
    • edible rice paper
    • ground nuts for dusting

    Directions

    1. Whisk egg whites until very stiff.
    2. Add a few drops of lemon juice. Sift icing sugar and fold in one spoonful at a time. Remove 3-4 tablespoons of the mixture for the glaze and chill.
    3. Add the cinnamon and ground almonds to the remaining mixture.
    4. Preheat oven to 170 degrees C.
    5. Dust a work surface with ground almonds. Roll dough out to a thickness of 0.75-1cm. Cut out star shapes then place onto rice paper and then transfer to a baking tray. Brush evenly with glaze.
    6. Bake in preheated oven for about 12-15 minutes.
