A large square apple pie is cooked using a homemade pie crust and fresh apples with cinnamon. Once baked the pie is cut into squares and served hot or cold like a slice.


Serves: 12 

  • Dough
  • 4 1/2 cups (550g) plain flour
  • 350g margarine
  • 40g fresh yeast
  • 1 egg
  • 2 tablespoons caster sugar
  • 1 pinch salt
  • 1 teaspoon baking powder
  • Filling
  • 1.5-2kg tart apples, peeled and grated
  • 1 1/4 cups (250g) caster sugar
  • 1 teaspoon ground cinnamon
  • Egg Wash
  • 1 egg yolk
  • 2 tablespoons thickened cream
  • butter for greasing

  1. Preheat oven to 200 degrees C. Butter a deep baking tray.
  2. Dough: Knead together all the dough ingredients to form a smooth dough. (Crumble yeast into mixture before kneading).
  3. Cut the dough in half and line the prepared tray with one piece.
  4. Filling: In a bowl mix together apples, sugar and cinnamon. Pour into dough lined baking tray. Level out.
  5. Roll out the remaining dough on baking paper. Arrange over the apple mixture.
  6. Egg Wash: Whisk together egg yolk and cream to make the egg wash. Brush over the dough. Pierce the top several times with a fork.
  7. Bake in preheated oven for 40 minutes. Let cool before cutting into squares.

Fresh Yeast

Fresh yeast can be purchased in bakeries that make and bake their own bread. If unavailable, substitute it for 2 (7g) packets dried active baking yeast.
