Walnut, Almond and Chocolate Biscuits

    These taste great and are gluten free! The walnuts, almonds and chocolate are processed into a fine paste then added to sugar, egg whites and rum before being baked.

    Ingredients
    Makes: 50 biscuits

    • 200g walnuts
    • 50g almonds
    • 100g dark chocolate, diced
    • 3/4 cup (185g) caster sugar
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1 tablespoon rum
    • 2 egg whites
    • 2-3 tablespoons dark brown soft sugar
    • 50 walnuts halves

    1. Finely grind walnuts, almonds and chocolate in a food processor. Add icing sugar, cinnamon, cloves and rum.
    2. Whisk egg whites until stiff. Fold into nut mixture. The dough should be pliable. If it's too thin add more ground almonds.
    3. Sprinkle a work surface with dark brown soft sugar. Form the dough into two long rolls of 3cm diameter. Wrap rolls in plastic wrap and chill for 2 hours.
    4. Preheat oven to 200 degrees C. Line a baking tray with baking paper.
    5. Cut rolls into 1cm thick slices and lay on prepared tray, leaving adequate room for spreading.
    6. Top each biscuit with a walnut half and bake in preheated oven for 8-10 minutes.
