Light Chocolate Biscuits

These beautiful chocolate biscuits get their lightness from their meringue base. I like to use them for school and work lunches.


Makes: 30 biscuits depending on size

  • 50g dark chocolate, grated
  • 2 egg whites
  • 1/3 cup (90g) caster sugar
  • 1 teaspoon vanilla essence
  • 1 tablespoon cocoa powder

Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

  1. Preheat oven to 130 degrees C and line a baking tray with baking paper.
  2. Whisk egg whites until stiff. Gradually whisk in the sugar until smooth and glossy. Fold in vanilla sugar, cocoa and chocolate.
  3. Use 2 teaspoons to make small heaps of batter on the baking tray. Bake in the middle of the preheated oven for about 30 minutes.
