Ginger Biscuits Coated in Chocolate

I got this great recipe from a friend after having them at her house. Plain biscuits have a layer of crystallised ginger and almonds added before being baked; when cool they are part coated with chocolate.


Makes: 70 

  • Biscuit
  • 1 3/4 cups (220g) plain flour
  • 1 pinch salt, to taste
  • 1/2 cup (60g) caster sugar
  • 1 egg
  • 75g butter, at room temperature
  • 1 teaspoon vanilla essence
  • Topping
  • 1/3 cup (90g) caster sugar
  • 50g butter
  • 50g thickened cream
  • 150g almonds
  • 100g crystallised ginger, finely diced
  • Chocolate Coating
  • 75g dark chocolate

Preparation:45min  ›  Cook:15min  ›  Extra time:2hours curing  ›  Ready in:3hours 

  1. Biscuit Base: Preheat oven to 200 degrees C.
  2. Mix flour, salt and sugar.
  3. Beat egg, butter and vanilla essence until fluffy.
  4. Add egg mixture to the flour then knead until smooth.
  5. Line a baking tray with baking paper then roll out dough on the baking tray.
  6. Topping: Place sugar, butter and cream into a small saucepan. Bring to the boil, stirring occasionally.
  7. Stir in almonds and ginger. Heat the mixture then quickly spread over the dough.
  8. Bake in preheated oven for 15 minutes.
  9. Cut into thin strips whilst still warm and carefully place them on a wire rack to cool completely.
  10. Chocolate Coating: Melt chocolate in a bowl over simmering water or in the microwave then dip one end of the strip in the chocolate; let set on wire rack.
