Creamy Chocolate and Coconut Truffles

    These are an easy cream and chocolate based truffle with a tad of coconut for texture. They taste great and are a decadent chocolate treat that also makes a great food gift.

    Makes: 40 truffles

    • Truffles
    • 250g milk chocolate
    • 60g butter, softened
    • 1 tablespoon caster sugar
    • 2 tablespoons desiccated coconut
    • few drops vanilla essence
    • 150ml thickened cream
    • Coating
    • 200g milk chocolate
    • 50ml milk
    • few drops vanilla essence

    Preparation:1hour  ›  Cook:5min  ›  Extra time:1hour chilling  ›  Ready in:2hours5min 

    1. Cut chocolate into pieces then melt in a double boiler. Stir in butter and icing sugar.
    2. Remove from heat and stir in coconut and vanilla.
    3. Whisk cream until it thickens but not so that it is stiff. Fold into the chocolate mixture and mix well. Chill.
    4. Once the mixture is quite solid scoop out portions using a spoon and roll into balls.
    5. Coating: Break the chocolate into pieces. Melt with milk and vanilla in the double boiler stirring to a smooth consistency.
    6. Line a baking tray with baking paper. Dip the truffles in the chocolate using a fork or a wooden skewer. You will have to work quickly while the covering is still runny.
    7. Place the truffles on the greaseproof paper and allow the chocolate to set. Place in little paper cases and store in the fridge.
